MARYLAND CRAB CAKES
It is a treat, when I go to Baltimore to teach the School of Southern BBQ. The seafood is fantastic. One of my favorites is Maryland Crab Cakes. Here is one of the recipes I finally figured out.
- 1 lb Lump or Backfin Crab, Picked Over
- 2 tsp Old Bay Seasoning
- 1 Egg
- 2 tbs Mayonnaise
- 1 tbs Dry Mustard
- 1 tsp Salt
- 1/4 tsp Red Pepper (Or To Taste)
- 1 tsp Chopped Fresh Parsley
- 6 Crackers (maybe 8, crushed fine)
Sprinkle Old Bay over picked crab and set aside. Beat mayonnaise into egg till well blended, then beat in remaining seasonings except crackers. Sprinkle crackers over crab, then pour egg mixture over the top and gently mix by hand till crab is well coated. Cover and refrigerate a while to allow flavors to develop. Shape into 4 cakes and fry in hot oil until crispy on bottom. Flip and continue cooking till cake is done and crispy, (they can be broiled also instead of frying). Drain on paper towels.
